Chef Francesco Mangano makes food that reflects his Italian upbringings which is traditional to the Emilia-Romagna and Toscana regions. Francesco has staged and worked in restaurants in the United States and Italy. Examples include "Felidia" in New York, "Harvest" in Madison, and "Il Bargello del Marchese" in Bologna, his hometown. After completing a Masters in Food & Wine Tourism and Promotion of Regional Products at the University of Siena and Arezzo, Francesco Mangano came to Madison to open Osteria Papavero in 2006.
The food
The food offered at Papavero focuses on the rustic food of both the Emilia Romagna and the Toscana regions, with the addition of weekly specials that showcase the local produce and the products offered by our Wisconsin farmers.
